Paruppu vada is a south indian snack. In kerala tea shops ( kerala nair chaya kada :-P), most of the people use to have tea with this famous crispy snack - paruppu vada. But i remember the best paruppu vada i had at Tirupur railway station....Oh god it was so crunchy and yummy. Try this recipe at home and i am very sure that you will like it...
Chana dal (bengal gram) - 1/2 cup heaped, soaked for 4 hours
Dry red chilli - 2 nos
Green chilli - 2 nos, finely chopped
Onion - 1 small sized, finely chopped
Curry leaves - few, finely chopped
Fennel seeds - 1 tsp
Asafoetida (hing) - 1/2 tsp, powdered
Rice flour - 2tsp
Sodium bicarbonate - 2 pinch
Salt to taste
Oil to deep fry
Method
The more you soak the dal, the more tastier will be the vada. Put the soaked dal inside a blender alongwith the dry red chillies and make a very coarse paste out of it. DO NOT ADD WATER, NOT EVEN A DROP OF WATER. Put this dal paste in a bowl.
To it add onions, fennel seeds, asafoetida, sodium bicarbonate, rice flour, green chillies and salt. Mix it well and keep it aside for 15 minutes.
Place the fried vada on a paper towel, which will absorb your extra calories.....
Serve hot with tea....ummmmm
