Aapam is a kerala born crepe. To prepare this, a broad kadai is used (which is known as aapa chatti). Aapams are usually served with stew (vegetable/chicken/mutton stew). But my personal favourite is having aapam with thick coconut milk and sugar (do try it).
To prepare the aapam batter you will need:-
Raw rice (a.k.a. white rice or pachari) - 1 cup heaped
Parboiled rice (ponni rice) - 1/4 cup
Grated coconut - 1 ladle
Idli dosa batter - 1 ladle (if you don't have idli dosa batter then you can add 3 tbsp of whole urad dal)
Boiled rice - 1 ladle
Sugar - 2 tbsp
Salt to taste
Method
Mix raw rice and parboiled rice and soak it for 7 hours. Grind the soaked rice with coconut and boiled rice. Grind till it turns into a smooth batter. Put the batter in a bowl and add idli dosa batter. (If you don't have idli dosa batter then soak 3 tbsp of urad dal with the rice and grind it). Also add sugar and salt and keep the batter overnight to ferment.
Next day take the batter and add 4 pinches of sodium bicarbonate and mix well and use the batter after 10 minutes.

Pour a ladlefull of batter into the aapa chatti, hold the chatti in your hand and rotate it, so the batter will cover the sides of the chatti. Place it on the flame with lid on and cook till the sides turn crispy and golden.
