Ghee rice

In malayalam ghee rice is known as "Nei Chor"....It's an indian fried rice, very easy to make....I forgot to take a nice picture of my Ghee rice, coz i was in a hurry....So let's start with the ingredients....

To serve 2 people you will need:-

Biryani rice - 2 cups (biryani rice a.k.a jeerakashala rice. you can also use basmati rice, but i prefer biryani rice).
Ghee - 6 tbsp
Onion - 1 small sized, sliced
Garlic - 6 cloves, julienned
Cashewnuts - 15 nos
Green cardamom - 4 nos
Cinnamon - 3 sticks of 1 inch each
Cloves - 8 nos
Water - 4 cups
Salt to taste

Method

If you are using 1 cup of rice then you will need 2 cups of water to cook the rice. If you use more than that then the rice will get overcooked. 1:2 is the ratio......

Now heat ghee in a pan (preferably a non-stick pan).



Add cardamom, cinnamon, cloves and fry for a minute.



Put onions, garlic and cashewnuts and fry till the onions turn transparent.


After that add water and salt to taste. Close the pan and wait till the water boils.

When the water is boiling, add rice, after washing it in water (to reduce the cooking time you can soak the rice in water for 15 minutes). Mix it well and cook with lid on under medium high flame for 5-10 minutes, after that reduce the flame (very low flame) and cook the rice for another 10 minutes(stir in between). 



Tasty Tasty ghee rice ready....serve it hot with mutton korma or with chicken masala and raitha....

    I tried it yesterday and it was good... I even added onions fried in Ghee on top of this.... It was awesome!! Only thing is now I have to skip lunch for 2 days n already started using stairs instead of elevator to office....
