Medhu vada

Medhu vada is a south indian snack. With medhu vada we can prepare dahi vada and sambhar vada. Or you can have it with coconut mint chutney (the recipe of coconut mint chutney is in Chutney corner section).
  
So to prepare 10 vadas you will need

Whole Urad dal - 1/2 cup (heaped)
Onion - 1 small, finely chopped
Green chillies - 2, finely chopped
Curry leaves - few, finely chopped
Pepper corns - 1 tsp
Baking soda - 1/2 tsp
Rice flour - 2 tbsp
Salt to taste
Oil for deep frying

Method

Wash and soak urad dal in water for 3 hours. Drain the water, and put the dal in a mixer and make a fine paste out of it. DO NOT ADD WATER.

Put the urad dal paste in a bowl, to it add baking soda, onions, green chillies, salt, peppercorns, curry leaves and rice flour. Rice flour will make your vada so crispy. Now keep this mix aside for 15 minutes.



Heat oil in a kadai, and apply oil on your fingers and take some urad dal mix and flatten it and make a hole in the centre and drop it in hot oil and fry it till it turns golden in colour. Your tasty medhu vada is ready....have it with chutney or with sambhar....



I enjoyed it with chutney. Yummyyyyyyyy

    one thing i've got 2 tell u abt medu vadai is , reduce the soaking time to 30 -45 minutes, grind this well using minimum water, do not use baking soda or rice flour. u'll get it light & crrrrispy
